Refurbishing an old house and have a new t&g white deal roof in the kitchen. Do i need to varnish it or can i leave it as it is and allow it to darken naturally. i don't want it to get too dark just slightly darker than it is already. any advice would be greatly appreciated.

Hi, I'd let it get darker naturally. Eventually you will have to paint it, as it will continue to darken. It's nice painted white, as it will give the impression of height and light to your kitchen. PS. When you are painting it, caulk the gaps after the first coat.

Would steam / condensation not be an issue with exposed untreated wood in a kitchen?
