So I've been doing a bit of demo work today in preparation for building a new shower. In the pictures attached you can see the plaster coming off the concrete block walls in certain areas. It is less than 3mm deep. Do I need to replaster that before tiling or will the tile adhesive fill the gap and be OK?

The walls need to be primed first.Bal apd primer is probally the best make.Skim the gaps with the tile adhesive and leave it set.
I presume you will be fitted a new shower.
A Bal shower tanking kit is also worth fitting

Thanks. Yes I'll be fitting a new shower on the adjacent wall. I'll have to cut a horizontal channel to run the pipes so I think I'll patch up the gaps afterwards then tank the whole area before proceeding.

I need to make a shower pan also, will regular cement do or so I need something specific to showers? I plan to fit the drain and waste pipe and pour the cement and shape the floor. Then I'll tank it and then tile it. Will that be ok?

You will only need to tank the areas they might get wet.there is no need to tank to the ceiling.
A 4 to 1 sand /cement mix will be fine[dry mix well packed]
Fix the drain and waste pipe in position first, and pack mortar underneath it and to the sides and leave it set.It should be level and square to the two walls and fitted at a height to suit the falls.A day or two later you can fill and shape the rest of the floor, its so much easier and accurate if the drain is fixed in position first
