Can't seem to do this with excel
I would like to have two workbooks open at the same time one on each screen

Can you not just open two instances of excel and open one file in each?

Excel is funny about multiple windows its annoying.
If you open up one spreadsheet, then right click on the excel icon in taskbar to open a new spreadsheet that should open it in a new window in which you can the open the excel file you want. Don't know why they made it so unintuitive.

Create a copy of the workbook and drag it out.

What version excel are you running. It works fine for me on 2013 win10. Different spreadsheet one each screen. you could also try open excel twice and move one to the second screen

You need to open 2 instances of excel or else they wont drag to separate screens. Open the workbook you are working on and to open a second workbook you must open excel through your start program or desktop shortcut, if you open as normal it will open in the same instance of the original workbook and wont drag across

As already said open an additional instance of Excel, drag it to the other monitor and open another spreadsheet there.

Unlike Word where each doc is a separate instance only way I could find until Microsoft realise tabs are not just useful in browsers
