Dealing with dripping shower.

Hoping I can get some advice about a dripping shower.

It's not electric - it runs off a gas boiler that is on the floor below it (into which water is pumped from a pressurised tank that is on the same floor as the shower).

There's a picture of it here.

When it's off, it will still drip away, and more so when a tap is turned on elsewhere in the house and the pump kicks into action.

If I twist it into an even more 'off' position, it will stop alright, but resume not long after as it settles back into position.

I'm assuming that it's a washer that needs replacing, but wondering (if that is the case) whether or not it is something simple enough that I (as somebody with no special understand of plumbing at all) could do myself.

Its called a bar mixer. The hot /cold side has a cartridge. The one /off side has a spindle. Most likely the spindle needs replacing

Is a spindle the same thing as a flow control cartridge?

The spindle does control the flow in this instance, so I suppose you could call it a 'flow control cartridge'.

Typically these spindles are similar if not the same as the ones you find in regular water taps.

You could if you felt up to it:

Isolate the hot and cold water
    Remove the knob
Brace the body of the unit and unscrew the spindle

If it looks anything like this, you'll have a good chance finding it at any half decent plumbing supplier.
