Star trek beyond should have an episode where they meet a ship descended from of Gaeilgoirs from 21st century earth. Of all the issues they've explored over the years you'd think they would've covered language and Heritage.

Isn't that what Up the Long Ladder was about?

Also, when did allegories stop being a thing? There's plenty in Star Trek about about characters exploring their heritage and keeping their traditions alive in a new cultural setting, granted it's usually aliens, so why would you need a very specific incidence that relates exactly to your situation?

    Um no, no they shouldn't.

Besides, as said above, it's been done and wasn't much to shout about.

I vaguely remember there was some Irish spoken on-screen (badly) in an episode of Andromeda. One of the main characters was of Irish descent.
