Recently there was an update and it changed to Samsung internet and up until then any tabs I had open would always have the most recent one at the bottom. Was it a system update?

If so you'll need to root to get the old version of the app back.

I'm not sure been honest. I'm not bothered about rooting so was hoping it was a setting that I missed or didn't know about.
