Dulux water based paint removal

I had a painter in today to paint a bedroom, i asked him to freshen up the already white window frame and paint the walls.

Came home to find that he had painted the wooden door, skirting boards, window cills white but hadnt actually painted the window frame!

I stayed cool and said that I didn't want to paint the door, cills or skirting boards because the rest of the house is wooden and assumed it was just a mistake that could be rectified but he told me that there was 3 coats of water based paint on them and my best option would be to leave it or else replace them all because the paint cant be removed.

Is my best option to just leave it all white or will it be a costly/ time consuming job to get the wood back to what it was?

He doesn't sound like a painter at all Tbh. Water based emulsion on walls and oil based paint on wood. Also real painters and decorators don't make mistakes like painting a thing that they are not supposed to.
I would think the only way to bring it back to the wood is to sand it down.
