When I take my cheesecake out of the fridge and loosen the tin, bits come away at the edges so it looks all uneven Any tips to get a smooth finish?

Run a knife or palette knife dipped in boiling water around the edges before you move the tin.

Cut a strip of baking paper and line just the side of the tin. It should pull off easier, and leave nice clean edges.

You could also just give in... coat the sides with shredded white choc/dark choc/coconut as appropriate...
