Stay and work after studying here

I am studying to be a Veterinary Nurse in Athlone IT at the moment, and I am a russian citizen, I'm on stamp 2, student visa.
After completing a third level education in Ireland I am allowed to stay for 6-12 months in the state in order to find a job at my profession and obtain a work permit.
However, veterinary nurse is on the list of professions that are ineligible for a work permit.
I can't find which law outweighs the other, and no one gives me an answer.
Is there a chance for me to stay in Ireland (that is my home) and work as a vet nurse after graduation here? I don't have any EU/etc relatives.
    Grateful for any help.
