Is it possible to check the date of the last update for iOS on an Apple device?

If you aren't using iTunes, then Settings>General>Software Update.

Sorry I should have clarified, I meant checking when the new update was installed on the smart device.

If you updated via iTunes, yes probably. But if you updated directly over-the-air from the device itself, probably not.
