Coconut Cabbage Recipe

    A really nice side dish, tried it the other day and it's a winner. Easy, cheap, very yummy and vegetarian/vegan/low carb/ friendly.

    Ingredients:
    1/3 head of White cabbage roughly chopped
    1 Yellow pepper chopped
    1 white Onion diced
    1 clove garlic thinly sliced
    1 small piece fresh ginger finely chopped
    1 green chilli (to taste)
    1 half teaspoon powdered Tumaeric, cumin, coriander, dried coriander leaf
    Salt and pepper to taste
    1 can coconut milk
    Oil

    Method:
    In large pan fry off onion on medium/high heat
    Add garlic, ginger and chilli and fry
    Add dried spices and cook until fragrant
    Add chopped pepper and allow to soften
    Add cabbage and toss in spicy mixture thoroughly.
    Reduced heat and pour in cocount milk, stir.
    Cover and simmer, mixing occassionally until cabbage quite soft
    Add more water if it gets to dry, you want a spicy coconuty creamy sauce coating everything.

    I never knew coconut milk can be used with cabbage. Interesting idea.
