Cooker Hood - cutting chimney to size

Have a low ceiling and need to get a cooker hood to fit over a new hob.
All I've seen have chimney min height ~600mm.
I have ~400mm to play with.

The motor in the hood sits down close to the bottom and the chimney is just to hide the duct and wiring.

Has anyone ever cut one of those chimneys down before? Best way without destrying the stainless steel.
Anywhere in Dublin that would do a good job of it?

I don't know how handy you are or if you have the gear. If I was doing it I would use a 4 1/2" angle grinder with a 1mm cutting disc for s/s.
The s/s in those is pretty thin, so fairly easy to cut.
