Looking at picking up an LG TV with Freesat HD onboard, but I'm wondering if I set the country profile to Ireland, will the Freesat functionality then be disabled by default?

AFAIK it's part of FreeSat T&Cs the unit must be set to UK. In my experience, setting any FreeSat device to Ireland will change it to basic FTA. Setting to UK just means that the Saorview terrestrial channels will not be in order and need to be sorted manually. During set up it may ask for a UK postcode. Just enter any code for the city of your choice. This determines which regional versions of BBC and ITV you get.

Your TV must be set up in UK mode to receive Freesat

Your Saorview channels will then be in the 800's
You should be able to re-order them if you wish

It's the only way to get a 7 day EPG on both services

Series Link will only work on Freesat via USB
