I am flying with Aer Lingus from Dublin to Amsterdam next Tuesday from terminal 2. I have no checked baggage and boarding is at 5.45 with departure at 6.10

As I havnt flown from T2 or flown at that time before I am wondering whats the latest I should arrive?

All of the security lanes will be in operation so it should be fairly efficient thought there will be lots of people travelling. I'd aim to get to the terminal at 5 a.m. Flights at that time of the morning going to busy airports like Heathrow or Schipol tend to board early so that they get away on schedule and don't miss their slot at the destination airport so expect to be on board with the doors closed at 6 a.m.

I'd aim for 5 a.m. it's mid week in January so the airport shouldn't be particularly busy.

Id aim for one hour before departure for that time of the day, and 2 hours during the rest of the day. That is generally my aim anyway, and I usually say that to pack enough time for delays getting to the airport, break downs, punctures, public transport failure etc. nothing worse than being late for a flight!
So if I was you my aim would be an hour beforehand, however arriving at 5am should be sufficient.

Im traveling in from Clondalkin so will leave plenty of time for that journey. I have checked in on line with Aer Lingus and printed out boarding passes so is it literally arrive at airport, go though security and then on to boarding gate?

Yes. Just before you enter the security area there will be an official who will ask for your boarding pass which they will scan. When you're at the gate and are called to board, the Aer Lingus people will want to see the boarding pass and ID which for a flight to Amsterdam will need to be a passport.
