I have these two large grass plants which spill onto the driveway. If there a good way to cut/trim them back, without it looking like a hatchet job?

They are not grass, they are Phormium also known as New Zealand flax.
Just cut them back at the bases of the leaves, they are tough and won't be harmed by a bit of judicious pruning.
Start with the oldest and largest leaves they usually have the most damage.
