If 'contrails' is the right word,
Why are some longer, and stay in the sky for hours,
and others seem to disappear after a few mins?

Why use quotation marks on the word contrails?

Anyway the sgirt answer is different atmospheric conditions.

I was just looking at two planes flying parallel to each other with different contrails (without quote marks),
    maybe at different heights?

hey mikeymouse, dont worry about using quotation marks, you were only asking a question . Anyway depending on the temperature and humidity at the altitude the contrails form, they may be visible for only a few seconds or minutes, or may persist for hours and spread to be several miles wide, eventually resembling cirrus clouds which you would often see on a fine summers day. Some large aircraft like a 747 can leave a long contrail and sometimes Crow instability occurs when the wingtip vortices interact with contrails from the engines.can appear as like the contrail is all mixed up.

I think it's to do with how much moisture is in the atmosphere and how cold it is at a given height.
If the air is saturated at a particular level, contrails will form and if air is dryer, contrails are shorter, less prominent and even the distance at which they begin to form from the back of the aircraft engines can vary too.

I saw two planes on a clear day one was leaving a contrail and the other plane was leaving none. This explains the reason

It's a joke, chemtrails are a conspiracy theory that the vapour from aircraft is not the proven theory of water vapour but infact a mass evil scheme between the major governments to spray the citizens with chemicals for some reason.

So the two planes I saw today ,appeared to be the same size,
flying parallel to each other, with different contrails
could have been 10,000 ft apart?

It's not the most popular of conspiracy theories.
