Labrador as a deer tracking dog

    Hi,
I have been thinking about getting a dog but was hoping to get a dog at around maybe 12 months old, I am just not sure I have time for a pup. I go deer stalking most weekends and do a bit of pheasant shooting also so was thinking of getting a Labrador. What I am wondering is, whether 12 months would be too old to start training a dog on deer tracking etc? I understand the basics are as important if not more important but just wondering if anyone has had any experience with something similar?
    thanks
