So I went off meat, dairy etc about a year ago and I need another LC subject, the ag science class is just starting in my school and I think I want to join. My Dad is a farmer and I have very easy access to a farm. Do you think I should still do ag science even though the thought of meat and dairy makes me so sad😥

Well you're not being asked to eat meat as part of the course, just learn how animals are reared on farms - which is only one aspect of the course. If you from a farm, you already know how this works. Do you want to study the subject?
