Profiterole Chocolate Sauce

    I have tried a few recipes for chocolate sauce to go with profiteroles but I find them all too bitter.
    Can anyone recommend a recipe?

    Profiterole chocolate is usually bitter due to the high cocoa content of the chocolate. This can be offset by making your whipped cream sweeter.

    I like it kind of bitter, say 50% cocoa solids choc but if you find that too bitter add some sugar until it is as sweet as you want it. Better to start with a strong chocolate for the flavour but no reason you can't sweeten it.
