Carrot & Ginger soup with Cannellini beans (white kidney beans). You can use red kidney beans if cannellini are difficult to source.

Really lovely soup - all my friends love it.

Cannellini beans are absolutely full of goodness - google and see

There is a nice white bean and chicken stew on the BBC recipes website.

I sometimes make this bill grainger side dish as an accompaniment to grilled chicken or steak, serve with a simple rocket salad dressed with lemon juice, yum!

    Ingredients
    Tin of cannellini beans
    Small punnet of cherry tomatoes
    Half a small red onion
    2 cloves garlic
    Dried chilli flakes
    Balsamic vinegar
    Dried oregano
    Olive oil

    Method
Pre heat oven to 180 degrees.
Drain and rinse the beans, tip into an ovenproof dish. Slice the cherry tomatoes in half then add to the dish. Finely slice the garlic and red onion, then add those. Give a slight drizzle of olive oil, then a sprinkle of chilli flakes, season with salt and pepper then toss to combine ingredients. Cover with tin foil, then put into oven. After fifteen minutes, remove the foil, mix again with a spoon to stop the top drying out, then return to the oven without the foil for another fifteen minutes. Remove from oven, when dishing up lightly drizzle with balsamic vinegar and dried oregano, then enjoy!
