I ordered a package last week, according to the tracking, it left its country of origin on the 23rd, but thats the only information there is about it. If was shipped (well flown) on the 23rd, then it had to have arrived in Ireland on the 24th. Heres what it says on An Posts site:
Friday	December 23, 2016	Normal mails service
Saturday	December 24, 2016	No collections or deliveries of mail
Sunday	December 25, 2016	No collections or deliveries of mail
Monday	December 26, 2016	No collections or deliveries of mail
Tuesday	December 27, 2016	No collections or deliveries of mail
Wednesday	December 28, 2016	No collections or deliveries of mail
Thursday	December 29, 2016	Normal mails service
Friday	December 30, 2016	Normal mails service
Saturday	December 31, 2016	No collections or deliveries of mail
Sunday	January 1, 2017	No collections or deliveries of mail
Monday	January 2, 2017	No collections or deliveries of mail
Tuesday	January 3, 2017	Normal mails service

So the only way its gonna arrive on the 29th or 30th is if its waiting in my local post office. Does mail continue to be transported around the country during these times when there are no deliveries and the post offices are closed? Or does it remain at the place it arrived at before the holiday period started? Meaning will it continue to make its way to my local post office, or will it remain in the main sorting center it arrived at until the post offices open up again?

My understanding is that nothing is transported 24th-27th. No An Post staff are working from the evening of the 24th until tomorrow morning 28th. Until then, it will remain where it arrived. It may have arrived and been sorted on the 23rd-24th but wouldn't have moved since.

Post that is delivered tomorrow would have been sent to the local post office on the morning of the 24th.

Still no changes to the tracking information. Can you track a package coming from another EU country after its arrived in Ireland?

Tracking number usually works on An Post website. If it doesn't then no, you can't.
