20 Lb Turkey - turn upside down when half way cooked ?

    Is this necessary ? Wise ? Even dangerous !

    I'm asking for a friend who insists it's the way to go given the huge size of the turkey - 20 lbs

    Is cooking the legs separately a better idea?

    According to some chef on the radio earlier you're meant to put it in the oven upside down for half an hour and then turn it for the remainder...I've never turned it .

    Lots of diff ways to do it. All about trying to keep the breast meat a bit moist. Put it in a Turkey bag, Cut open bag for the last 30/40 mins to brown.
    Very good one to TV was to soak a muslin in butter and drape over the turkey. Baste every 30 mins.

    We half the turkey as that is enough. That way their is both brown and white meat.
