Ideas for frozen cooked Lobster

    So, taking advantage of the supersaver deal, I've picked up a couple of the LIDL frozen cooked whole lobsters.

    I've had the raw lobster tails and they were lovely just done simply in oven with butter.

    But I'm thinking as these lobsters are already cooked, they might need a bit more work.
    Something like a lobster \ seafood linguine?

    I also have some tinned crabmeat if that helps to spur an idea.

    I don't think I'd cook them any further at all because you run the risk of making them tough, imho. I would take the meat out of the shells, cut into bite-size chunks and dress the lobster meat and the crab in a mayonnaise dressing and serve a seafood cocktail. We make a dip of mayo, cream cheese, finely chopped scallion, Lea & Perrins and good old ketchup with S&P with either crab or prawns and it's lovely. It's rich but you don't need the seafood swimming in it and the mixture works really well as a cocktail dressing. If it appeals to you at all, I can look up the exact ingredients/measurements for you, it's an ancient recipe from a little cookbook from 1954 but it's delicious and everyone wants more! Hope it helps a bit.

    I would definitely go with something along those lines. A dressed salad is ideal.

    Personally I'd also throw in a dash or two of hot sauce, but it really depends on the diners :D

    Not yet... actually the plan is to have them on Christmas Eve with some white Burgundy... will make a nice change from the 'traditional' fare of turkey & ham over the following few days.

    We usually have beef or seafood on Christmas Eve, this year the LIDL special swung it to seafood :)

    After much consideration - lobster rolls and lobster pot pie were also considered - we went with the seafood linguine idea as the 'cocktail' approach is more something we would want to try in summer with some ice cold rose.

    Feck, I was afraid of that...

    ALDI in East Wall had a few frozen cooked Canadian lobsters left... think they were a little smaller than the LIDL ones, priced at €5.
    Iceland might have something similar to LIDL also but think theirs were €7.

    So the dinner was a great success...

    It was based on this recipe:

    A few substitutions... cod fillet for scallops, and fresh dublin bay prawns for shrimp.
    The pasta was tagliatelle as no fresh linguine could be found.
    And the wine was a Saint Veran.

    Will be repeating it, but next time we'll probably have to use white fish and prawns with crab instead of lobster - unless LIDL are running the deal again :(
