Creating a Cheese Board and looking for some different ideas?

Tasted a beautiful blue cheese that had been washed in red wine and wrapped in vine leaves so that's a definite.

    Any other ideas?

Coolea extra mature is a must.

I also would like a nice cheeseboard, just for me! I have a savoury tooth and I have sorted out sweet things for the rest of the crew.

So far I have Brie de Meaux, Compte, and Cashel Blue.

If anyone thinks that is not enough, please add!

    I will try anything.

    Peppered soft cheese is lovely

One thing I wouldn't do is buy cheese with festive flavourings like fruit or that.

It has to be the all year round deal for me.

God I love cheese. But there is so much to choose from!!

Well I've got the blue and will try that coolea extra as the hard cheese, so now looking for a decent Brie and then a goats or cheddar?

I like Boursin or something similar, and frozen grapes!

Heagertys or moss field are great cheddars.
Cooleny is a lovely brie type cheese (maybe a bit milder)

I'll probably enjoy an easisingle or two over the festive season. Not much of a cheese person!

Donnybrook Fair have a really good creamy Gorgonzola. They have to sell it in individual plastic containers, as once it's cut it oozes out like creamy liquid.

Every time cheese comes up, I always say the same thing : Please buy Irish!

We have a wealth of world class Irish made cheeses. 80 to 100% of my Christmas cheese board will be Irish and no one will be disappointed!

Every year I usually grab a cheap wheel of Camembert for baking. I take two squares of puff pastry, in a circle spread a decent layer of cranberry sauce. Place the wheel on top, and stick a few sprigs of rosemary on top then cover with the second layer of pastry, sealing the edges with a fork and cutting off excess pastry in a circle around it. A quick egg wash, fork once or twice to allow air to escape, then into the oven until the cheese is bubbling out.

Will try this, sounds lovely, havent made it before with the puff pastry!

I'd echo what tbr says about going Irish, but would also add that you can't beat some comte & quince jelly & a nice glass of port.

    Comte is usually my exception.
    I have a friend's quince paste.
Blackwater Hedgerow Gin instead of port.

Supervalu have boards of 4 cheeses for €10. A tiny jar of sauce and a few crackers.

I have to admit feeling like buying half the shelf the other day.

Not mad about thise prepacked choices ...would rather pick individual cheeses.

Picked up my cheese selection from On The Pigs Back yesterday before the English Market goes completely mental.

    Mossfield Matured Cheddar
Coolea 18 Month Old Gouda style (salty hard fudge!:D)
    Oisin Mature Goats Gouda style
    Drumlin Smoked hard cheese
    Oisin Goats Brie Style
    Cooldaniel Blue
Milleens Cead Semi Soft washed cheese
    Easter Mature Comte

    1.25Kg in total.

I have some quince paste that a friend made.
Will serve with Blackwater Hedgerow Gin.

My personal taste leans much more towards the hard cheeses so the selection reflects that but I think there is something for everyone there (apart from people who only go for famous foreign names:p).

Gin with cheese not something I've considered. Interesting

I couldn't imagine it replacing my faithful Dow's Tawny with some very mature gouda.

It's like a Sloe gin. So really a gin liqueur.
Dark red and lightly sweetened and 30%
I'd drink it where you'd have a port or sweet sherry.

Manchego cheese goes really well with a G&T - or so I tell myself anyway!

Cheddar, vodka and blueberries. :pac: (Irish, from Lidl)

Added another (*shock horror *) foreign cheese to the list.
Brillat Svarin Affiné soft cheese from Burgogne on offer in Lidl.

Port Salut spread on crackers is devine and if I'm looking for a cheese with a bit more bite I go for Ossau-Iraty if I can find it.
