Question about Schengen visa

This might be not the best place but here I go:

I am working in Ireland with work permit and residency permit. I need to get Visa for travelling in Schengen areas.

It looks like they ask "Your residency at current country must be valid at least three months after return of your trip". I totally forgot that and bought tickets.

My residency permit will expire after 2 months 13 days from my return date. I called the embassy of the country I am looking to get visa and they said that it will be a problem (or might be they said don't remember). I will be going there for 4-5 days and I already bought concert tickets (so I can show it as proof) and I have hotel reservation.

Can I renew my residency permit 4-5 months before it's expiry? Providing documents from my employer and writing a guarantee letter with my visa application would make any change? Or is it directly "don't even try situation".

GNIB expiry is due to May 2017 and it means I won't be able to get any visa till that time. I have valid work permit till May 2018.
