So meeting the contractor soon, of course for previous work and besides the most common sense, what questions would you ask them before agreeing on a deal?

Defects and liability
Relevant insurances
HRI?
SEAI Grant?
What do they make of the drawings and details, can they foresee any issues?
Certification and sign off (but that should be on your side and be in place by now)

Scope - what's included and not included in the job.
Cost - fixed fee or not?
Payment - how much and frequency
Timeline - a good estimate of when will the different tasks be completed
Sign off & snag list
