I am wondering if anyone could have a go at explaining to me what is going on here.
    Oil fired boiler (pressured system)
When cold the pressure is at 1-2 bar but when heating hot water it will go up to 3bar (system was set for a max 2.5 bar - red handle on the guage)
When the rads are heating it is running up over 3 bar, I didn't let it go higher.

It used not do this fluctuating, holding steady at 2.5 when running.

Your expansion vessel is either flat, burst, undersized

    Cheers for the reply.
Has the EV lost pressure..it isn't burst from what I can see.
Do I need to get it re-pressured or get a new one?

There's no real way of knowing until you re pressurise it. You'll know within a few days if it's a success or not
