Lasagne sheets hard?

    Whenever I make lasagne, the sheets go really hard and stick up in the air. I boil them to make them soft before I make the lasagne, so why is this happening?

    I gave up on the hard lasagne sheets and I gave up on using the kits as well. For the kits because there was never enough bechamel sauce, and for the hard sheets because I tried all kinds of hacks and tricks to get nice soft sheets after cooking, including boiling them in a frying pan prior to adding them to the sauce. Tesco sell fresh soft sheets. Theyre about 1.30 for a packet and so much easier to deal with. No precooking needed, just layer them in your sauce and pop in the oven. They are much closer to the real thing that you would get in a restaurant or in Italy.

    Are you putting lasagne sheets at the top without some kind of sauce over them?

    Are you making a very dry lasagne? If you have a good saucy bolognese sauce and a good amount of bechemel, you should have no problem. I always use the dried ones...

    do you cover the lasagna with tin foil for most of the cooking?

    Soak the dried ones in water while you prep the sauces. Then when you're done layering, put a bucketload of bechamel on top, so no sheets are poking out. How much cheese you put on top is up to you :)

    Just make someyesterday . Lasagna sheets dried from aldi. But even when i buy tesco ones they're fine too. It needs a good layer of meat/sauce and a layer of bechemel sauce ( i make that myself as dont like bought). Plus cheese on top. Always georgeous.
