Bought a Volvo S40 last week with cream leather interior and the passenger seat in front and some of the rear seat seem to have what I can only imagine is a coffee stain??

Have absolutely no experience with leather, so have not touched a thing yet and I would appreciate any advice as to what is the best way to attack this

Leather cleaner and some elbow grease should chip away at it. Maybe a steam cleaner with microfiber on the head to if you have access to one.

I will resist the chance to say you hope it a coffee stain ....... oops failed to resist lol

Cool. Will give it a try anyway. Don't have a steam cleaner but will see how I get on.
As for the "coffee stain".......I'll just keep hoping!

Give a clean with an APC first to get the worst of it off. Use a brush to get into the crevices.
