Its your wedding day hun, you don't want to be gagging trying to eat your meal! :)
Personally I wouldn't be a huge fan of pork, but if it was put in front of me I'd eat it cos I'm not rude ;)
Any of the options sound good! its totally up to you! I've been to a few weddings where there was no fish! didn't even enter my mind that it wasn't there! Most (sane, reasonable) people will understand you can't please everyone!

Don't know if that last sentence came out the way I wanted it to haha.. I meant that people know you can't have everything on the menu and if they don't understand that or give out about what is on the menu then they are not being sane/ reasonable :):D

Could you get a lighter option maybe? They all sound very heavy! How about a vegatarian option?

In my experience a lot of my peer group would order a good vegatarian dish if there was no fish option, they eat meat but want to eat something lighter given the dancing etc required later.

Whereas people I know wouldn't mind the bigger meal for soakage :) lol

If fish is that strong smelling I would be worried about it , would not appear very fresh to me

You could go for a Cod option it usually smells less than other fish

I personally would go Pork Belly , but the Chicken or Turkey options are probably better contrasts to the Beef.

As some one already said, pork is a limited taste. Some find it hard to digest. I'd leave that out, no opinion between the other two.

Would it be completely mad to have the meat option and a vegetarian option and let people pick one or the other?

We had turkey and ham as a second option at our weddng and it was a massive hit with everybody.

People give out about turkey and ham but I love it!

I would personally choose that (over everything!) but I love pork too. We had pork at our wedding. I would avoid chicken altogether as most people cook it at home a few times a week.

You can't go wrong with Turkey and Ham.
It's a crowd pleaser. If not, go for the chicken.

I adore pork, so I'd go for it without a doubt. However, in terms of an option that the greatest amount of people would eat then perhaps the chicken would be good? TBH, unless it's a Christmas wedding, I'd avoid the turkey and ham option.

I am quite happy eating turkey and ham only once per year. It's nice but it is one of those dinners that is nice because of other trimmings and because of the occasion. My personal preference would be pork or possibly vegetarian (not if it's penne something) but because you are already set on beef I would go with chicken.

I would personally go back to them and point out that they offered you three pork options! I'd ask if there wasn't something they could do with chicken that didn't involve bacon.

How else can you make roster chicken or turkey breasts edible? :)

It's very dry cut of meat and especially with chicken you will get sawdust if you don't wrap in something juicy.

Braise them, would be my first choice. Possibly in a nice dijon mustard and white wine sauce.

May I ask what starters you have picked? If they are rich I would avoid the Pork Belly. Turkey and Ham if done well is good but again quite filling. A lot of people put fish on because it is lighter than meat. Depending on your starters I wouls probably go either chicken or just the vehgie optio

Why not just make the veggo option non-silent. Yes people will pick it - but cutting down on the amount of meat human eat is only going to make the world a better place.

If the venue are worried that they might run out ... well perhaps they need to be told to get their ordering proportions sorted out! They wouldn't bleat about how they might run out of beef / fish / whatever.

    Agree with this 100%

Brining works great. I brine my Christmas turkey, it's lovely and juicy. I brine overnight then roast.

I think most people can chose between beef and a nice vegatarian option.

There's not much variety between beef or other roast meat, you'll have people who like rich meat spoiled for choice and people who don't unimpressed and complaining that there's no fish or veggie option! (Only vegetarians will ask for the silent option so it doesn't really count!)

And you serve it with ham? ;)

I like chicken (while chicken or legs on BBQ would be one of my favorite foods) and I like turkey but chicken breast is an awkward piece of meat to get taste and texture into.

I am one of those that usually orders fish at a wedding or for dinner out. Mainly because meat at night makes me quite sleepy.
And I'm a fusspot about my beef, I like it cooked medium rare, which is hard to do for large functions.

I would think that the pork belly is very fatty, so either of the others. (But if I was given a veggie option there, I'd take it)

I didn't realise you had specifically asked about a vegatarian second option, they are usually much cheaper to provide so it's surprising they told you they would charge you extra if your second option was vegatarian.

My advice would be ask people who don't eat beef what they would choose, as they are the people who will be forced to eat your second option. A lot of people are telling you their favourite of the 3, but might be happy with the beef so that's doesn't help you pick a well balanced menu.

My advice is go for Turkey & Ham. In general it's popular and even though it gets slammed in boards I know lots of people who'd love it.
I had to organise a function at college and pork belly was on the menu and it didn't go down well. It wasn't my choice to put it on the menu but somebody insisted on it saying it was so popular. Very few people ordered it!

Out of your choices I'd have gone for the Pork Belly. However, as pointed out that leaves anyone not wanting the heavy meat with no alternative.
I really don't get why a venue would rather serve meat, which is more expensive that veg generally, than offer you a vegetarian second option. I'd talk to them and bring up that point and insist that since you hate fish (if you've not said it, say you're allergic ) and that leaves you very limited with all the meats now.
