Hi, we are currently doing some reconfiguration in our house, and need to block up a window. There is currently an alarm sensor on the window that I want to remove. As far as I know the window sensors are looped, so should I just link the two blue wires and the two yellow wires?

Yes. Just join colour to colour. Are there any other windows you are disconnecting?
If there is a single cable like those you would join the yellow & blue together.
