I have two ipads with different problems. The first one (iPad3) has a terrible wi-fi signal e.g stand near router you have two bars, walk out of room, nada. With the other, as you type the words don't appear for a few seconds and its running really slowly. Any help really appreciated.

Is there anything on them that's vitally important ? If not, then a default factory reset to both would be your best bet.
