Christmas breaks

I'm looking at skipping Christmas this year. A bit of sun wouldn't hurt but not too hot either. I'm not someone that would lounge by the pool, like to get out and explore. I would like to do it cheaply as well, if its possible €500 or thereabouts. Has anyone any ideas?
