Hire a moped and go touring the island
    Go to the night market
Take a day trip quad biking etc (these can be booked most places)
Go to watch the Thai boxing
    Go zip lining

There are loads of things to do, have a look on viator to get an idea of some of the day trips you could do

I would second this, how long have you got on your holiday?

Regardless of if you have the accommodation paid for in Phuket, you could easily go a few places from there and get cheap accommodation have a much nicer holiday.
I would imagine Phuket would get very old, very quick as it is the equivalent of Magaluf for Australians (or such was my opinion of it)

Spend a little more on a car so you don't end up as one of the 100s of tourists seriously injured every year renting mopeds on the island.
