We were recently in Ireland and loved the brown bread with pumpkin and other seeds. It seemed most pubs and resturants had it, but the carriage house at ashford castle had the best. Now we are home and have tried many brown bread recipes, none are close to what we had in Ireland. It may be a far shot but does anyone have a good recipe we can try?

I don't have a recipe but maybe the problem is that you weren't searching for brown soda bread?

Try the Odlems website, they have some good recipes. They make flour.

This looks like it (from the ingredients anyway) avoca does a kick ass version.

Where are you based? IF you're stateside, you can't just use regular brown flour to make an irish soda bread. You'll need to seek out the King Arthur Flour's Irish stoneground flour. It's a closer wheat/grind to what we get in Ireland. (All my Irish expat-stateside buddies encounter this problem)
