Looking to build a new Gaming machine for 1440p gaming. I also need it to be quick and speedy for opening applications and overall computer usage.

I have a budget of 1000e. I dont need a Monitor, keyboard or mouse.

Kiki has a solid build, you could go like this if you want a bit more GPU power:

Should handle 1440p no problem. Just bare in mind, the mobo has MUCH less USB, SATA and other features than Kiki's build. You have less RAM in this one too, but IMO 8GB is fine for entry, you can always add more if meeds be.
The above PSU is good but not as good as Kiki's suggestion. Then again, they are both solid performers.
