What is the law regarding CCTV systems with the capability of listening into employees conversations in the workplace?

You may find yourself in breach of the Data Protection laws..

    Data Protection CCTV
    Covert surveillance.
The use of recording mechanisms to obtain data without an individual's knowledge is generally unlawful.

The main rule is the use and purpose of use needs to be disclosed with a visible notice to staff. Contact the Data Protection Commissioner if this has not been communicated to you properly.

I was on that website but it gives me no info on video surveillance with sound and I known that it is happening where I work from some of the conversations that the management have with me and the rest of the employees

I would have thought that the words "Recording Mechanisms" would cover both Audio and Video.
Do you believe you are being covertly recorded without any notice of cctv being used?

Your best to contact the Data Protection Commissioner, inform them of all the details and the DPC will give you very detailed response, they are excellent at replying to enquires.

I also found this from the PSA.

    https://www.psa.gov.ie/en/PSA/psa%20Watch%20Issue%2029.pdf/Files/psa%20Watch%20Issue%2029.pdf
It should be noted that the recording of sound or voices (audio recording) by equipment used for security purposes is a considerable added intrusion into the privacy and data protection rights of individuals. In general, the Data Protection Commissioner does not accept that the use of such audio recording equipment is in any way justifiable or warranted even where members of the public or staff are aware that their voices are being recorded.
