Came across a couple of UK Apple store gift cards which were given to the kids by relatives. They can't be used on Irish accounts :(. Is there anything I can do with these to make them usable here?

Create a UK Apple ID for them, redeem the codes to that ID and download films or apps or whatever to their devices.

To be clear, OP, are you talking about Apple Store gift cards (to be used to buy Apple hardware/accessories in retail Apple Stores) or App Store cards (for use on the iTunes/App Stores)?
