social care employment and application form question

I am in the middle of filling out an application form for a youth worker. I'm finding it extremely difficult and all these application forms are like writing assignments in college. Hardly anyone just accepts a CV any more, but putting so much work into an application form and then getting "sorry you're not successful" is so demotivating. I understand why they do it, but still, it makes it so hard. But anyway, that's beside the point, I have a question regarding the one I'm filling out now.

"Referring to the person specification", it is asking me for 4 aspects I'd find the least challenging, and 4 I'd find the most challenging. My question is what DON'T I say in the 4 challenging aspects. I know what I'm saying for the least challenging aspects. For the Most challenging aspects, I have 2. and find myself saying something on the lines of "But I'm a quick learner". Can't really see anything on the person specification that I'd admit (to potential employers) what I'd find hard or challenging! Anybody have any idea what the employers are looking for here???
(I have just received a degree and never had paid employment in social care, only volunteering and placements)

It is also asking for my areas of interest in youth work "That may be relevant to the discharging the functions of this post" What does that mean? What kind of language should I use here? All youth work is my area of interest really, education and social development etc. Anyone know how I could spruce it up a bit?

p.s. it is a job I think i'd be really good at and have a lot of youth work experience so really want this to be a good application. Hopefully this doesnt cause the thread to be locked or anything! :)
