Portlaoise is very short of good cafes/restaurants like that. The Food Court out at The Maldron Hotel offers a good choice of food. It's a bit out of town. The bar food in The Killeshin Hotel is decent too but again it's around 2 km from Main Street.
The Pantry on the Main Street is supposed to be good for lunches, I've never been in it. And Relish also has a good reputation.

I would say Relish would suit best. If you happen to be there on a Monday, book - meals are half price and the place can fill up.

If they are at all partial to Chinese food, Emperor's House is a nice space also.

Of course, Supermacs/McDonalds are also there as a safe backup plan if all else fails!
