Looking into buying a ring at the moment. Which are the 3 most recognised diamond certification in Ireland/Europe?

The GIA is the most recognised and credible certification available, you'll also find IGI and EGL in Europe.

GIA is the one to go for. Dont bother with anything else.

    GIA only.
Any others are not worth it.

GIA certified stones have the series number laser engraved into them and can e checked by any jeweler around the world.

See this makes no sense to me. I have viewed stones from IGI, GIA and HRD and all look good and exactly the same. If you see a nice diamond on a ring you will not have a clue if it is IGI, GIA or HRD as long as it looks good and sparkles. I find it absurd that people state only go with this laboratory as they have the best Diamonds? They rate the diamonds! But it is you that is buying. Based on what you like the look of?

Answer me this, if you were offered a very high rated IGI diamond vs a poorly rated GIA diamond for the same price which would you go with?

People say to only go with GIA because the have the tightest criteria on their ratings and are the most reliable to ensure the quality of the diamond (you can do some googling for specifics). If you think a diamond looks nicer from another ratings agency then I you might as well take it.

Because I've viewed many stones with IGI, EGI Etc certs. And on more than one occasion the certs stated quality didn't match the actual stones.

By all means buy with the other certs but i wouldn't advise it.
The GIA is world known, you can walk into a shop in NYC or Dub or Lon and the stone and cert will have its value.
