I was wondering if someone was to crack their windscreen and need it replaced but had no windscreen cover on their policy.
Could they not just add it and then a few weeks later claim for it and save money?

They could but that would be fraud.

It's going to be a dead giveaway to the insurance company if you ring up and ask to add windscreen cover during the policy period and then claim windscreen damage later.

    Could they prove it though?
Or would they just refuse to do it?

You can't justify fraud under any circumstances.

High moral ground and all that admittedly.
