You should also factor in customs, stuff from DHL is very likely to be caught, not sure about EMS, others may know.

I would always try and use regular post as IME its more likely to slip through customs.

EMS is a system more than a carrier AFAIK.
Express Mail Service (EMS) is an international express postal service offered by postal-administration members of the Universal Postal Union (UPU).

So what you mean is China Post vs DHL.

DHL will likely be way faster (though if the seller pays a decent rate EMS can be snappy too(Currently tracking an item from China to london in two days) but DHL have followed the Fedex/UPS model of checking everything for revenue and charging a lovely great handling fee.

Also means AnPost at your door vs DHL, my Postie is really co-operative so I'd lean that way.

For speed and good tracking, I'll always opt for DHL. TNT are very good too.

Ems/china post tracking is less reliable and parcel can go via 2-3 different postal services before getting to an post.

Because i import as a business, i don't have an issue with vat and duties as it all has to be recorded properly and the vat is reclaimable and duty is less than 2% on the items i bring in.

If goods are over €600 (i think that's the figure) then an post won't clear it and will require you to clear via a clearing agent.
