I have the use of a garden circa 1 acre where I put a few calves.

This year the owner took out the ditch which was over grown and sprayed the dirt that was coming up where the ditch was today

From what I can see there is no ragwort in the ditch or on what was sprayed

When could I let calves in to gaze

The only official Monsanto info is from Canada and they recommend 3 to 5 days - http://roundup.ca/en/faq

Think some of the labels say no livestock for 7 days after spraying.

I think your best bet would be talk to the owner and find out what chemical he used and take it from there.
