    Have some Cod in the fridge, want to batter it not bread it. Any good recipes knocking around?

    Sorry I'm no help but would also be interested in the answer as I've only breaded it myself before.

    Would you need a deep fat fryer though? Would shallow frying in a wok or similar work?

    No I'd use a DFF, shallow fry wouldn't work ime, but you could half fill your wok with oil and cook it that way

    1 cup of flour.
    1tsp salt
    1tsp curry powder.
    0.5tsp paprika
    0.25tsp turmeric(optional but helps give a nice golden colour)
    whisk in sparkling water or normal water or beer until you get a batter of medium consistency.

    I use small bottles of sparkling water, you can get a 6 pack of them very cheap in lidl. Chill the water in the fridge before use. The batter will absorb less oil and be nice and crispy.
    coat the cod in the batter and deep fry for 6 mins. Fresh lemon juice squeezed on top is amazing :)

    I use Nathan Outlaws recipe & works every time:

    For the beer batter, combine the flour, yeast, salt, sugar and beer. Whisk together to form a smooth mixture and leave in a warm place for 10 minutes to activate the yeast and develop the flavour. Move to a cooler place until ready for frying
    • 230g of plain flour
    • 15g of dried yeast
    • 1 tsp salt
    • 1 tsp sugar
    • 350ml of ale
