So have 4gb Ram(1 slot of 2) in laptop currently @768mhz (i think). Getting 4gb card @1600mhz. I know ideally should install both same sticks but hypothetically would I be better off with 4gb @1600 or 8gb @768 (lower of the two being max speed)?.

Generally when you have two sticks of RAM at two different speeds, the faster one will default to the slower speed. So really it shouldn't make much difference which one you buy!

Edit: sorry read that wrong, personally I'd go for the 8gb @768, but RAM is very cheap at the moment so for not all that much extra you could pick up 8GB @1600.
