Chorizo

    If I throw Onions, Potatoes, Tomatoes, Chickpeas, chicken and Chorizo into a pot, with some chicken stock maybe, and cook it up would it resemble a edible meal? Any herb suggestions?

    I'd be inclined to cook the spuds separtely, cubed up they shouldn't take long to steam. Fry up the chorizo, then fry the onions/chicken in that chorizo fat, lob in the tomato and chickpeas, stock if you want a thinner texture. I'd say herbs are optional if you're adding plenty of chorizo

    Chorizo loves fresh rosemary.

    Or oregano. But use one or the other, because rosemary and oregano don't love eachother, in my experience.

    There are a couple of nice recipes in the Cooking Club - one with chicken and one without. You could of course add chicken to the stew recipe.

    I would follow Tree's advice. I make similar "stews" when it needs to be a pantry meal. Fried potato cubes on top are very nice, too. From experience potatoes don't cook properly, have a funny texture when there are tomatoes involved.

    If you want it to be a one pot meal just chuck the potatoes in about 30 mins before the end (size depending). They do tend to take longer when not being boiled in a clear liquid.

    If you have any garlic and smoked paprika chuck some in too when frying (careful not to burn them)
