And they have to sign off on document together, or can one executor do it all (herself !). I looked through Boards and the documentation and saw nothing about it. Any references to texts welcome too.

Short answer, yes, one executor can extract the grant themselves.

Have a read through the Rules of the Superior Court re Probate.
