Guys, I have a bit of coax cable running from the RF out on the Sky box which is in the sitting room to a TV in the kitchen (basically, back to back). recently Im getting sound interference (crackling noise) at times when viewing Sky on the kitchen telly. The telly is fine with receiving Saorview and Freeview channels (yes Winston, it is Freeview) so the problem is somewhere between the Sky box and the TV which most likely is the cable.

The cable is a tad awkward to get at so as a quick fix Im wondering if the RF channel output can be changed from no. 68 or would then even help with the crackling noise at all?

It certainly can be changed. Its in the installer menu I believe but its a while since I did that.
To get to installer menu, it's the old - services 001 select or services 401 select. I can never remember which it is.

In my diy opinion, its worth a try and certainly worth checking all connections on that cable run
