    I have two options:

    1) Air Canada from Toronto-Dublin (607 Euro approximately) plus aircoach from Dublin Airport to Cork City Centre

    or

    2) KLM from Toronto to Amsterdam, 2 hr 40 minute layover in Schipol Airport, then fly directly into Cork airport for 756 Euro.

Which option is better in your opinion?

option one as there are more ways of getting to Cork from Dublin than from Amsterdam - no brainer really

Don't see why you'd consider the second option. Sitting in an airport isn't any better than sitting on a bus. There's also a massive difference in price.

Dublin, you are also aware that Aer Lingus and Air Transit offer direct flights to Dublin also which may be cheaper.
